About the Author
Diana Henry has won numerous awards for her journalism and books and is the food columnist for The Sunday Telegraph. A Bird in the Hand received a 2016 James Beard Award , and A Change of Appetite, voted Cookbook of the Year by the Guild of Food Writers in 2015, was a James Beard Award nominee. Diana was named "Cookery Writer of the Year" by The Guild of Food Writers in 2009 and in 2007 for her column in the Sunday Telegraph's Stella magazine. She is a contributor to many magazines including Eating Well, Red, House and Garden, Country Living and Waitrose Food Illustrated. Diana has written nine other books including Crazy Water Pickled Lemons, Cook Simple, Salt Sugar Smoke, and Roast Figs Sugar Snow. Her new book, Simple, publishes in September 2016. Diana lives in London with her partner and children.

Fantastic. I have made a number of recipes from this book, and they have all been fabulous. Comfort food to dinner party material. There are quite a variety of cuisines represented here, the only common thread being, well, chicken. So far, all I have made have been very popular with my family. This book stands next to several Ottolenghi books for the number of sticky tags sticking out of the book to mark recipes that I want to cook; a veritable forest in this book. Looks like lots of fun cooking (and eating!) ahead. Highly recommended.
Every recipe I have tried from this book has turned out perfect and I am only an ok cook. It is easily my most frequently used cookbook. Her instructions are very clear and the flavors are complex and often layered. We've also found that you can substitute many recipes with a Rotisserie Chicken to speed of the process (those fresh ones from your local Kroger/Fresh Market/Fresh Thyme/Walmart/etc) - the Coronation Chicken with Mango and Avocado, the Chicken, Serrano Ham, and Pear Salad, the Chicken, Bacon, and Buttermilk Salad,the Warm Salad of Grilled Chicken, Freekeh, lemon, sour cherries, and mint, the Chicken, Cherries, Watercress, and creamy Tarragon salad, and any of the recipes in the section 'Remains of the Day' (when you don't actually have any remains).

ROOPA’S LEMONGRASS AND TURMERIC CHICKEN WITH POTATO SALAD AND DATE-AND-TAMARIND CHUTNEY was the first dish that I prepared (Ms Henry noted it was one of her favs ). I would say that it took a little while to prepare but the taste was phenomenal. The author provided suggestions for ingredient substitutes which is not a common finding in many recipe books or online resources. I believe this will be a wonderful resource to increase the variety of chicken selections for our family meals.
So many great recipes in here. If you are in a rut....grab this book. Gorgeous flavor combinations. Probably more for a foodie palette so if you aren't adventurous, this may not be for you!
Amazing, wonderful Cookbook. There are so many new ideas for bird recipes. Though I often make beer can chicken on the grill, you haven't lived until you have made Ms Henry's ginger beer chicken on the grill. A must have book.
Great variety on how to cook chicken, quite a bit of the items will be found in your pantry. Easy to follow.
All of Diana Henry’s cookbooks are great. I got hooked when a friend sent me Simple. I’m on a mission to collect them all. I’ve also gifted this to my mom and it’s now a family favorite.
Bought this following one of the recipes being demonstrated on a well known Saturday morning cookery show. So far every recipe we have tried has worked and tasted great. Have bought multiple books as presents for friends, all of whom have loved it too.
